Foodin's raw chocolates are the result of long-term passion and responsible development. Our founder Lasse Jalkanen is known for his great love for raw chocolate, which is why chocolates are a particularly important product group at Foodin.

The raw material for our chocolate is the indigenous Criollo cocoa beans, which are cultivated by hundreds of families as a livelihood in the heart of the Peruvian Amazon rainforest. Our raw chocolate gets its sweetness from Indonesian coconut sugar, which has been dubbed the world's most sustainable sweetener and has a low glycemic index.

FOODIN'S RAW CHOCOLATES ARE DOMESTIC HANDMADE

Foodin raw chocolate is made by Finnish craftsmanship at our Vaajakoski factory. Raw chocolate is made using the traditional stone ground method, where giant millstones grind the raw materials into chocolate mass for two to three days. By using a low temperature of less than 42 degrees Celsius in the manufacturing process, we ensure that the cocoa beans remain intact until the finished product. The gentle stone ground treatment also affects the structure and softness of the chocolate.

Once the chocolate mass is ready, our stone ground masters Sanna and Malla will make a strict taste and composition assessment of the mass. It is important to ensure that the mass is even and silky soft and has the right taste. After this, the mass is tempered, i.e. heat-treated. Tempering ensures the chocolate has a shiny and beautiful shade. Dark chocolate requires a slightly higher tempering temperature than light chocolate. The tempered chocolate mass is shaped into chocolate slabs using ready-made molds. The finished slabs are then used on a vibrating plate, which removes air bubbles and smooths the surface beautifully. The chocolate slabs are cooled in the refrigerator.

All of our raw chocolate products have received the Key Flag label as a testament to Finnish expertise and work.
